Note: Lemon cake makes me think of my Mammaw. She used to make the most delicious lemon cake. She would make it in a 9x13 pan and use the end of a wooden spoon to poke giant holes and then pour the glaze all over it. She would give us a piece while it was still warm and you would almost have to eat it with a spoon. My cake isn't nearly as good as my Mammaw's, but you can't buy Mammaw's love at the store.
Lemon Supreme Cake
Ingredients:
1 lemon supreme cake mix
1 cup apricot nectar
3/4 cup Crisco oil
4 eggs
1/2 cup sugar
Directions:
Mix cake mix, sugar, oil and nectar together. Add 1 egg at a time. Bake in Bundt or tube pan at 325 degrees for 1 hour.
Mix 1 cup powdered sugar and juice of 1 lemon. Poke tiny holes in cake and pour over cake while still warm to make glaze.
