Note: My husband adores salmon. In fact he loves all fish. The problem? It seems to be my achilles heel in cooking. However, this recipe is very simple and has wonderful flavor! It is also very quick!Skillet SalmonIngredients1 Tbsp oil
4 salmon filets
1 cup fat free milk
1/2 cup light cream cheese
1/2 cup chopped cucumber
2 Tbsp chopped dill
DirectionsHeat oil in skillet in medium high. Cook salmon for five minutes on each side until flaky. Remove to warmed plate and cover with aluminum foil.
Mix milk and cream cheese in skillet. Stir in cucumber and dill.
Add salmon back to skillet and cook for 2 more minutes.

Don't laugh, but the only salmon I ever cooks comes out of the can and is made into patty's.
