Little Guy's Chocolate Chip Muffins

Note:   Mississippi doesn't see cold weather like we have had.      Baking and cooking has not only been a good way to warm the body, but it has been a good way to warm the house.    Little Guy likes warm breakfast.     He has never been a cold cereal or pastry kid.     He wants warm, stomach filling breakfast.      As a treat, occasionally he makes these for us.

 
 
Little Guy's Chocolate Chip Muffins

Ingredients
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/3 cup vegetable oil
3/4 cup miniature semisweet chocolate chips

Directions
In a large bowl, combine the first four ingredients. In a small bowl, beat egg, milk and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.

Little Guy's Apple Chips

Note:     Little Guy is having so much fun with his new food processor.    The first night he got it he wanted to chop and mix everything.     To try out his slicing blade, he grabbed a few apples and ran them through.    Immediately he said, "I bet we could make apple chips with these!"      So we did.      What a delicious snack.


LITTLE GUY'S APPLE CHIPS

Ingredients

1-1/2 T. sugar
1 t. cinnamon
1 large crisp apple (Braeburn or Granny Smith)

Directions
Preheat oven to 200 degrees, then line a baking sheet with parchment paper.     Mix together sugar and cinnamon.   Wash apples and run through slicing blade of your food processor.    

( If you don't have a food processor, use a knife to quarter the apple lengthwise.     Cut up the slices as thin as possible.)  

Spread the apple slices on the baking sheet in one layer.     Sprinkle with spice mixture.     Bake for 1 1/2 hours.     Rotate the pan and bake another hour or until crisp.      If you don't think they are crisp enough, just turn off the oven and leave them pan inside until desired crispness.

Once they are done, remove from the oven, cool and then transfer to a container with a lid.      Yummy!

Little Guy's White Bean Chicken Chili


Note: Little Guy has become quite the cook in our house. I can literally go days without touching the stove because he wants to cook. He recently took a class at the Viking Cooking School. When our church announced that they would be having a chili contest as part of our Fall Fest I knew that it would a perfect fit for him. He has always wanted to enter a contest.

We were so excited when he won the TOP OVERALL trophy for the entire competition! So excited for him.

Little Guy's White Bean Chicken Chili

Ingredients
5 boneless, skinless chicken breasts
3 T. butter
2 cloves garlic, minced
16 ounces salsa
4 cans Great Northern Beans (15 Oz), loosely drained
2 cups Mexican Blend Shredded Cheese
4 ounces green chilies
8 ounces frozen corn
3/4 c. sour cream
1 teaspoon Cayenne Pepper

2 teaspoons cajun seasoning
12 ounces chicken stock
salt And pepper

Directions
Melt butter in large skillet. Add garlic. Brown chicken breasts in butter and garlic. Remove chicken and cut into bite size pieces. Add pieces of chicken to the crock pot. Add salsa, green chilies, chicken stock and spices to the crock pot. Stir to mix. Add beans, corn, and cheese and stir again. Cook on low for 6-8 hours. About 1 hour before serving add sour cream and stir.

Serve over rice or Fritos and top with more sour cream and cheese. Yummy!

Little Guy's Chocolate Sauce

Note: My Little Guy loves to cook. When he gets up in the morning he doesn't turn on cartoons, he turns on the Food Network. Yesterday he said that he had an idea for a recipe for chocolate sauce. He said we had a lot of marshmallows and thought they would make a good chocolate sauce. I told him to go ahead and try. I really wish that I had taken a photo, but we were too busy eating! Little Guy has earned himself a new knickname: Little Chef.

Little Guy's Chocolate Sauce

Ingredients:
1/2 stick of butter
1 cup of marshmallows (packed)
1/2 cup chocolate chips

Directions:
Melt butter in sauce pan. Add marshmallows and stir until melted. Add chocolate chips and continue stirring until melted. Serve immediately warm.

Little Guy served this with fresh sliced apples and marshmallows. We all agreed that this would so great over ice cream too!
