Shrimp Salad

Note: We are vacationing on the beach so we have access to plenty of fresh seafood. I am trying to cook in the condo to stick to our budget but that doesn't mean that we can't eat really well!

Shrimp Salad

2 lb. med. shrimp, boiled, peeled and deveined
3/4 c. mayonnaise
1/2 c. diced green bell pepper
1/2 cup diced celery
1/2 cup sweet salad cubes
1/4 cup capers

juice of 1/2 lemon
salt and pepper to taste

Mix all ingredients together in a bowl and enjoy!
