Uncle Larry's Potato Candy


Note: My BIL brought the ingredients to teach Little Guy how to each potato candy while home for Thanksgiving. He said it was the first thing he ever learned to cook. My BIL is now a big executive for Morrisons. He knows how to cook and he knows food. Little Guy would be thrilled to learn to cook with his Uncle L! We just wish they lived closer.

Uncle Larry's Potato Candy

Ingredients

1 small white potato
1 box confectioners sugar
peanut butter

Directions

Boil potato. Peel and mash. Add approximately 1 box of confectioners sugar until soft dough is formed. Roll between wax paper until 1/8 inch thick. Spread a thin layer of peanut butter over the top. Roll up like a jelly roll. Refrigerate overnight. Cut into pieces and cut into small pieces.

According to my BIL, it was the first thing he learned to make and it is very rich and yummy.

never seen or tasted this before. might must have to give it a try. it looks pretty easy and anything with PB get's my attention.

my mom and grandmother used to make this and i have not thought about it in years! Thanks so much for helping me remember, this would be really easy for Sam to make!
