Cracker Corn Broccoli Casserole

Note: My boys LOVE this casserole. I think I made it six times before any of them noticed that there was broccoli in it. This recipe doubles really easily too.

Cracker-Corn-Broccoli Casserole

Ingredients:

1 box Chicken-in-a-Biskit crackers

1/2 to 3/4 stick margarine, melted

1 can whole kernel corn

1 can cream style corn

1 small can shoepeg corn

1 pkg. frozen, chopped broccoli, partially thawed

Directions:

Crush crackers in a plastic bag (great job for the kiddies) and add melted margarine; mix well and set aside. Drain the whole kernel and shoepeg corn; combine with creamed corn. Add teh broccoli and 1/2 the cracker mixture; mix. Place in a greased casserole dish and cover with the remaining cracker mixture. Bake at 350 degrees for about 30 minutes. Makes about 12 servings.

Wow, another good one from you, one that I normally would never make it, and that's exactly why I am going to. This will be dinner along with the dorito chicken this weekend. hopefully.

I posted the chess squares today...
